🌸πŸ₯— Spring is the perfect time to reset and rejuvenate your body with fresh and healthy meals. πŸ’ͺπŸ’š One of the best ways to do that is by incorporating delicious and nutritious salads into your diet. πŸ₯—πŸƒ These three springtime salad recipes are not only bursting with flavor but are also packed with vitamins, minerals, and antioxidants that can help boost your energy levels, promote digestion, and leave you feeling light and refreshed. So, get ready to indulge in some mouth-watering salads that will nourish your body and delight your taste buds! 🀀πŸ₯—


A) Strawberry Spinach Salad:

4 cups fresh spinach leaves
1 cup sliced strawberries
1/4 cup sliced almonds
2 tbsp crumbled feta cheese (not eating dairy? Switch feta for cashews or almonds)
2 tbsp balsamic vinaigrette dressing

Directions:
Add the spinach leaves, sliced strawberries, sliced almonds, and crumbled feta cheese in a large bowl.
Drizzle the balsamic vinaigrette dressing over the salad.
Toss everything together to combine.
Serve and enjoy!



B) Quinoa and Spring Vegetable Salad:

1 cup quinoa
2 cups water
1/4 cup chopped green onions
1/4 cup chopped fresh parsley
1/4 cup chopped fresh mint
1/4 cup chopped fresh dill
1 cup chopped cucumber
1 cup chopped cherry tomatoes
1 cup chopped asparagus
2 tbsp olive oil
2 tbsp lemon juice
Salt and pepper to taste

Directions:
Rinse the quinoa and add it to a pot with water.
Bring the quinoa to a boil, then reduce the heat to low and simmer for 15-20 minutes or until the water is absorbed.
Fluff the quinoa with a fork and set it aside to cool.
Add the cooled quinoa, chopped green onions, parsley, mint, dill, cucumber, cherry tomatoes, and asparagus in a large bowl.
Whisk together the olive oil, lemon juice, salt, and pepper in a small bowl.
Drizzle the dressing over the salad and toss everything together to combine.
Serve and enjoy!



C) Mango Avocado Salad:

4 cups mixed greens
1 ripe mango, peeled and diced
1 avocado, peeled and diced
1/4 cup sliced red onion
2 tbsp chopped fresh cilantro
2 tbsp lime juice
2 tbsp olive oil
Salt and pepper to taste

Directions:
Add the mixed greens, diced mango, avocado, sliced red onion, and chopped cilantro in a large bowl.
Whisk together the lime juice, olive oil, salt, and pepper in a small bowl.
Drizzle the dressing over the salad and toss everything together to combine.
Serve and enjoy!
